Raw Ice Cream: Avocado & Figs
Summer= Ice Cream
What a simple equation. So is this recipe!
1 Avocado
5-6 Dried Figs
1/2 cup almonds (pre-soaked) or 1 banana
1 teaspoon Arrowroot Powder
2 tablespoons Agave Nectar
1 teaspoon Pure Vanilla Extract
2/3 cups filtered water
Blend it, freeze it. 1/2 hour later, take it out blend it (by whisk or blender) and shove it back into the freezer. Do this in 1/2 hour intervals for 2-3 more times to break up ice crystals. And then freeze for another 4 hours. Garnish with mint leaves or sliced dried figs.
If you have an ice-cream maker, it would be so much easier.
P/s: I don’t have mint that day so it’s garnished w/ parsley. I normally don’t use parsley for sweet desserts.
Had this for breakfast. It was great. I can have this for breakfast Everyday for sure!

Hi Geri.. that looks really interesting! Ice cream for breakfast sounds very sinful.
The Sentosa resort I’m staying at has a “conscious dining” cafe featuring food like this, so I might check it out and report back to you..
Sure! Let me know how it goes. Enjoy your little getaway! This is quite sin-free, all good fat and no refined sugar. haha EXCUSES yah?
