Sushi Burrito Baby
I’ve got Korean yellow- fleshed sweet potatoes (sweet potatoes, yam, whatever you call it) lying in the pantry threatening to grow mold. I was craving carbs but I think I kind of went a little overboard. Let’s do some math:
[Purple rice = (millet+ sorgum millet+ buckwheat+ brown and black rice)], x sweet potato x avocado= one full carb filled happy vegan.
So in the steamer the s.p or yammie goes. I steamed it on the top tray above some purple rice, intending to make a nice sushi roll. However, in the attempt of using up all the rice in the pot, my sushi transformed into a burrito. Err…
It looks like a wrapped up baby if you view it top down.
I used 1/2 tblspn of mirin, 1tblspn of apple cider vinegar for the sushi rice. Added cucumber and avocado strips and top it off with coarse korean chilli flakes. I should have added faux bacon bits for an extra kick but I decided to go healthy on this carbo load, stick with wasabi, soy sauce and go nuts with the chilli flakes instead.

This baby taste delish. I will ween off cooked works after this. I hope.
Horrors! I know this is morbid but I actually recalled watching a horror film which a baby came out eating its mother. I think the film was titled ‘The Omen 666′. Can’t remeber cos’ I watched it years ago. Also adding to my sick sense for horror movies, I once designed a movie poster for a hypothetical film call ‘Mother Eaters”. Isn’t that sick?
